The Dishes of Tuscan Traditional Cuisine: T-Bone Steak Florentine Style



We apologize with the vegetarian (whose choice we respect), but we, the "chiantigiani" (the inhabitants of the Chianti region), cannot resist... the T-bone steak Florentine style is part of our DNA, as are Chianti gentle hills, the olive trees and cypress-tree-lined roads!

The name "bistecca" is said to come from the English beef steak, as this particular cut of meat was called by some English knights who happened to pass from Florence on Saint Lawrence`s Day, when the Medici used to have pieces of meat roasted in the squares of the town and distributed to population.

The T-bone steak Florentine style is prepared with some loin of beef (12-18 month old) of Chianina cattle. The choice of the meat is fundamental, and it must rigorously be of Tuscan origin!

Cut and cooking are two more essential aspects. The T-bone steak Florentine style must have a thickness of about 5-6 centimetres (otherwise it is just an ordinary chop!) and obviously come with the T bone.

The T-bone steak is then grilled on very hot embers so as to form a crust on the outside, whereas the blood stays inside making the steak tender and juicy. The meat is to be cooked for 2-3 minutes on each side and 5 minutes on the bone, turning it only once. If the steak does not fall when you rest it on the bone, your butcher has made a great job!

A holiday in Chianti is the perfect occasion to taste a real T-bone steak Florentine style! You can have it in every restaurant and trattoria of the Chianti region! Alternatively, you can try to cook it by yourself with the barbecue in the garden of your villa or farmhouse in Chianti!

If you decide to cook it by yourself, you need a good butcher. Only a butcher who really loves meat can supply you with excellent-quality steaks... and in the Chianti region you will find plenty of them. Some butchers organize real "workshops on the beef steak" in rustic rooms on the floor above their shops: an opportunity to taste the real T-bone steak Florentine style and discover all its secrets.

Just a last tip: the T-bone steak Florentine style does not like water or fizzy drinks. Its sole and irreplaceable partner is Chianti wine! And now... enjoy your meal!!!
